Wild Beluga caviar is the rarest and most expensive caviar in the world, highly sought after for the size of the eggs. It comes from the world’ s largest saltwater lake, the Caspian Sea. Beluga sturgeon must mature for 20 years before it produces eggs capable of being processed into caviar.
