Kaluga Gold, a selected hybrid of Kaluga and Amur sturgeons from Amur River basin, is among the finest species in the sturgeon family. Its caviar has a dark green / black color with about 3 mm grain size. This caviar can be compared to Beluga’s in flavor and appearance. It has a delicious creamy taste with light nuttiness and the malossol way of preparation only emphasizes it.
